When you start xfig, there is a Grid Mode button down left, well that 
isn't really what you need. If you press any drawing button, a
"Point Posn" button will appear next to the grid button.
The grid button is just about the visual grid, the posn button is the 
invisible placement grid. Easiest is to have them set to the same 
sufficiently corse grid.
 There is also the "Angle Geom" button with wich you can 
restrict which angles lines to be drawn can have.

There is no problems adding text to a symbold in a schematic.
Just add the sybol to the canvas, select it, press E E
(or menu Edit-> Edit...), then there comes a popup window.
In its "Add Attribute" frame choose a "Name:" (whatever name suits you),
and in "Value:" enter whatever text you want. Make sure "Visible" is on 
and you probably want "Show Value only", then press the "+ Add" button.
