The script at [1] will help you to do just that. Probably, you have to download last gschem sources for that though I am not sure. At least, it is for 1.9.x series but I was not able for some reason to change background color before some changes introduced recently. Download the extension script colormap.scm, and use the command gschem -s colormap.scm and follow the instructions in popup window. Warning: the script changes gschem keybindings, so you won't be able to work with schematics in that gschem instance after loading the script. Close it, after you saved the result that suits you, and make little edits of your configuration (this step may be needed only once). All the steps and additional info is in README at [1]. Enjoy!
