Actually, to be more precise, git does let you check out a subset of the whole tree. Note that I'm making the distinction between cloning and checking out. For cloning there's the shallow clone option, but I haven't tried that with sparse checkouts (I guess it should work). However, you probably won't be very happy with the user interface for sparse checkouts. For details consult the man page of git-read-tree.
