Check out "The Undocumented PC", from the Addison-Wesley Undocumented
Series.  I'm reading it now, and I am very impressed by its thorough
coverage: after 10 years of PC system-level programming, it still
managed to surprise me with some interrupts and ports I didn't know
about.  Its purpose was precisely what you lack in the other books:
to bring together all the otherwise scattered info.  If you want, I
can mail you the author name and the ISBN (but that would only be on
Sunday, as our working week is over until then).
