I then chose to 'Install from Internet' Doing the above updated any packages I currently had downloaded to current versions. By doing that, I had the current and correct libraries for limxst, libxml2, etc. Doing a plain gem install nokogiri gave me a functional nokogiri.so Hope this helps anyone with a similar problem.
