Technically it would work the same way.

It is however usually neither possible to give pins useful labels or pin numbers. For a ribbon cable and a one row connector symbol it would make sense to map so that symbol pins are in the same order as cables. Technically there would only need to be one symbol for each number of pins but for the most cases I guess it would be much simpler with a symbol resembling the physical look of the cable.
