Whenever I need a new symbol, I start with a similar part, either from
the geda distribution library or my private library and open that symbol
in gschem. Then, I make the desired changes (moving pins, adding pins,
deleting pins, renumbering and/or relabeling pins, device attribute,
graphical changes, etc.). When I am happy with the result, I open the
.sym file in a text editor and clean up any straggling bits (slotdefs,
etc). If I "reload recent" the file in gschem, I ignore the "file has
changed" warning and load it anyway. The entire process takes as little
as 5 minutes for simple changes - up to 1/2 hour for a complete rework. I
always save the result to my private library - not the system libraries.

gsymcheck can help catch errors.
