You can't change the pin attributes of references symbols (except for changing the pin numbers via the slotting mechanism). You can, however, change the text size in the symbol, or in the case of a library symbol, create your own copy of the symbol and change the text size on that. This is done as usual (e x -> Text Properties -> Size). You could also embed the symbol and change the text size manually in the file; I'd advice against this, though, as gschem doesn't currently have good support for managing embedded symbols.
