The thought which comes to my mind are Anderson Power Pole connectors.

They are an easy-mate system with several variants supporting
different currents, all the way up to 75A, ISTR.  They're popular for
exactly your application -- pluggable power.  You can get
mechanical cover plates which you may be able to use to create the
pluggable boxes you want.  For panel mount ideas, check out the
