The usual way is to make multiple symbols for different functional parts of the chip. For example, you might put all the power/gnd pins in a separate power/gnd symbol, etc. If you look at the schematics for http://www.delorie.com/electronics/rx/os-board.html you'll see some examples of it for U1.
