Uhm. How can a board with copper on only one side be a 2-sided board? 
Anyways, here are examples of single sided boards:

All footprints are drawn as if they were double sided and the few tracks 
on the component side translate to wire bridges later. When 
manufacturing the PCB, the component side is simply ignored.
