There are two major differences between vias and a connector
footprint that I can think of right now:

1. Vias are covered by solder mask if the board has solder mask. This
   makes it inconvenient to connect something to them.

2. Vias are intended only for connecting different layers, not for
   outside connections.

You mentioned that your power supply connection uses "probes" but
I'm not exactly sure how they look, so unfortunately I can't make a
specific recommendation about what is best. If you explain the power
connection in more detail I think you will get more suggestions.

It's your choice. If someone else has created and uploaded a symbol
or footprint which you can reuse then I would reuse. Sometimes
symbols and footprints need to be customized, e.g. to compensate for
some parameters in the board fabrication process, and that usually
means that footprints have to be created locally, even if a footprint
for the same package was already uploaded by someone else.

If you find footprints which you can use then I would use those!

I think for all my designs I have used existing footprints for many
parts, but usually always needed to create some new footprints
myself for a few parts.
