I guess you will have to crack a serial protocol here (I am
assuming that they communicate through a serial port). This
you could do by inserting a second PC that taps into the
serial line and logs all communication. There are several
possibilities to do this. Log the initialization and all
the controls and do a bit of analyzing. I don't think it is
very difficult.

It might help if you were a little bit more specific about
the scales, like make, type, etc.

But then again, maybe you can use this program:
