In my computer science class, we use them for several things:
1) When we don't know how big to make an array of data, in which case
a linked list will allocate only the amount of space it needs without
wasitng any
2) When we don't want to limit the size of data in an array. Instead
of declaring a static array of size X, the linked list can
theoretically grow forever (well, until you run out of memory =)
