The DosDoom port at http://www.frag.com/dosdoom/ can be compiled as is with djgpp, allegro, and bcd (a cd audio library).  You can obtain allegro right from www.delorie.com, and goto http://www.rt66.com/~brennan/programming/ for bcd.

Unzip with directories intact.  Go to the source directory and type MAKE <Enter>.  That's it.  The new binary should be in the dos directory and is called dosdoom.exe.

Note that allegro and bcd are only required for this particular port.  There are other DOS ports, but to my knowledge they are all based on this one.
