I suggest you look in these places:

1) Brennan's DJGPP pages: http://www.home.ml.org/brennan/djgpp/

2) The DJGPP FAQ: Download it from the same place you got DJGPP, in the v2
     directory, filename faq210b.zip. It has large sections on protected
     mode access to video memory, writing interrupt handlers, calling
     interrupts, etc.

3) Allegro: http://www.talula.demon.co.uk/allegro/
     This is a game programming library for DJGPP; it has excellent
     routines to perform many functions such as graphics, sound, input,
     timing, animations, and much more. It comes as a full source
     distribution and you can either use it as it stands, extract routines
     from it, or just look at it to see how to do various things.

     Look at the documentation section, and also the software section
