This part of the object file format used by DJGPP is the one that has seen the most change over the history of the project. Different versions of GCC, called with different -g options, have wildly different formats of symbol tables. > coff-go32 must be DJ's own BFD. It's really rather straight-forward COFF. DJ has a document about it at his web site. To read the symbols, your best bet is to use the GNU BFD library --- that's what the majority of other tools working on such files do.
