load up your jed.rc file (its in jed/lib/jed.rc) and search for this
section:

%
% TAB key setting -- by default, the tab key is bound to
'indent_line_cmd'.
% If you want a real tab inserted, uncomment next
line.
%
setkey("self_insert_cmd", "^I");
... and uncomment it.
Simple.
If you feel like a bit of scripting it should be possible to modify this
in the mode system to be selectable for various file types. I also have
indent_line_cmd bound to shift-TAB. Jed conveniently tries to retain
hard tabs even during autoindenting.
