However, in this case, output is not a 'terminal I/O' because it is
redirected to a file or a pipe.

Do these help?

"stdbuf -o L bash ./path/to/script.sh > stdout.log"
"stdbuf -o L bash ./path/to/script.sh | tee stdout.log"
