Both of these work fine for me in Cygwin (on Windows XP):
grep -nH -r "my pattern" --include "*.log" .
grep -nH -r "my pattern" --include=*.log .

The quoting of . and {} is not needed.
Perhaps the real problem is with "my pattern".
