When I'm using the gmail web interface (which isn't often), or if I happen
to notice that someone has left a quoted email address in the post I'm
replying to, I do it manually. For most of my email I use Thunderbird, which
works brilliantly with gmail over the imap protocol, and ... hmm, I can't
remember now if it always generates reply headers like the kind I'm using here
or if I had to edit the config, but anyway, it was easy and it just works, I
highly recommend it. (I much prefer a proper mailer to any web interface to
email, though that's a personal taste.)

    cheers,
      DaveK
