Nicklas,

Do you really need a schematic of that cabinet or just a drawing of how 
it is wired?
If you don't need the "intelligence" of a schematic or a netlist of that 
cabinet, I would suggest using a 2D drawing editor and making a 
connection drawing (aka "Interconnect Diagram") of it rather than a 
schematic. I use QCAD for such drawings.

That said, might I suggest getting a copy of USA Standard USAS Y32.16 
"Reference Designations for Electrical and Electronic Parts and 
Equipments". It may give you some ideas or even answer your questions. 
There is also USAS Y32.2 "Graphic Symbols for Electrical and Electronics 
Diagrams" for example standard symbols.

Then, if you _really_ want some heavy reading material, there is always 
DOC-STD-00100 (Mil-D-100/MIL-D-1000) "Engineering Drawing Practices", 
which has some example drawings of cabling and wiring, and MIL-STD-454, 
"Standard General Requirements for Electronic Equipment" (which mostly 
contains references to other standards documents).

Although these documents are somewhat dated, they can still be useful.
