In the end though I decided what I really wanted was not a MIDI guitar (well, I do, but this isn't it), but rather a new class of playing surface that borrows ideas from other instruments, but provides a heck of a lot more nuance than traditional MIDI controllers do, even if it requires its own learning curve. (I've always said, The greater an instrument's capacity for beauty, the more skill is required to make it not sound horrible.) One of the driving ideas (even though the kid is already a toddler now) is something that's dead silent to play, as in baby sleeping in the same room quiet, or not disturb people next to you on an airplane quiet - assuming playing it doesn't result in your elbows sticking out, etc..) Now that the kid is older and playing with musical toys (including dad's), I also like the idea of something about as safe as a 2x4 - no strings, wires... Hence my original idea of basically an acrylic or glass topped stick about 2in x 18in x 1in. That's why I was thinking touch surface.
