What I have done is an external script that from a (non-geda) source 
you can:

. create (update) a source-sym/subsheet-sch pair

. match the interface
  i.e. make sure that you have one port symbol for each pin in
  the "source"-symbol (but not the other way around)

. specify where the source-sym-pin-label text will be placed in
  the subsheet port-symbol so it will look "nice"

The proposed workflow is to
. specify the initial pins in the pin-file,
. make a first iteration sym/sch pair
. edit the subsheet sch
. add possible new pins in the pin-file
. rerun the script producing a new source-sym and upd. the subsheet
. revert the subsheet sch in gschem (the new port symbols will appear)
. connect the new port symbol within the subsheet, etc.
. in the upper sheet update the source-sym (will be a drop-in unless
  you rearrange the pins)
... etc.

Or would it be better to extract the interface from the subsheet file?
I think that would be harder to do unless you discipline yourself to
use a specific set of symbols only to be used for the
source-sym-pin -- subsheet-port-symbol interface.
