Maybe not two pairs of keys. It would make the most sense to me to
have one pair of keys like g/Shift+g or '[' and ']' to increment or
decrement grid within the current grid system of units (metric or
Imperial), and another single key to toggle between the systems of
units. To me that is actually better than two pairs of
increment/decrement keys since you can just back to whatever mils
grid you were using from a mm grid, and back. Just my opinion.

Also, I like key shortcuts I can hit with my left hand only
without removing right hand from mouse.

(on my qwerty keyboard -- I have dvorak but rarely use it
anymore... largely in part to difficulty handling one-hand key
shortcuts like Ctrl+x, Ctrl+c, Ctrl+w, etc.).

Regards,
Colin
