I think these are the major options.

1) DOSBOX http://dosbox.sourceforge.net/
    (but, DPMI support is supposedly disabled, since it's for gaming not
development...)

2) some version of DOS running under QEMU
FreeDOS http://www.freedos.org
DR-DOS http://www.drdosprojects.de/
PDOS http://sourceforge.net/projects/pdos
RDOS http://www.rdos.net/eng/

QEMU http://fabrice.bellard.free.fr/qemu/

3) some version of DOS (above) running under Linux's DOSEMU
DOSEMU http://dosemu.sourceforge.net/
