You don't.  You have to write to the video memory directly, unless you
switch to mono mode (bios mode 7), in which case you can't write to
the color screen except by writing to the memory directly.

Hard to say.  Given their usefulness as debugging monitors, I think
someone will always be willing to make them, but the availability is a
lot less than it used to be.

No.  The two cards would have hardware conflicts.
